Kochhar explores the flavours of his youth and his culinary adventures through North and South India - the sweet maker he watched as a young man to the snacks of the fishermen on the coast, the French influence in Pondicherry and the Iranian cafes of Mumbai.
In the kitchen, chef Sood interprets the classic street food dishes of cities like Jamshedpur, Chennai, Madras, Pondicherry, Mumbai and Delhi.
Guests can choose from seekh wali kaathi, the much loved lamb kebab of Delhi, rolled in paratha served with spicy green chutney or try some keema toast, slow-toasted bread with hand pounded lamb masala.
Sample Sood’s crumb chops, a British-style lamb cutlet, ‘Indianised’ over time with the local flavours of Kolkata or jhal moori, a Bengali staple of puffed rice salad with a hint of mustard.
The six-course sampler menu also includes fisherman-style crispy fried fish with laccha onion, and kori kempu — Atul Kochhar’s version of crispy chicken nuggets with a southern Indian twist.
Sweet offerings include halwai kee khatai, an evening snack from the kitchens of Chandani Chowk.
